March 2013 Lemon Cookies & Easter Shapes |

Ok,
yes, I like sweets. This is a cookie that we would make every year for
Easter. Some times we would make them into shapes like chicks or bunnies.
Other times we would roll them into a ball. Both taste great! |
| 6 | eggs |
 |
| 6 | tablespoons baking powder |
| 1 | cup shortening, melted |
| 1 1/4 | pounds flour, (yes pounds) |
| 1 | cup sugar |
| 2 | teaspoons vanilla or lemon extract |

GLAZE
|
| 2 | tablespoons lemon juice |
| 1 | tablespoon water |
| | confectioners' sugar |
|
Variation
|
| 4 | tablespoons cocoa |
| 1 1/2 | teaspoons almond extract |
| | Can use both of above in place of the lemon extract in the glaze
|
|
Melt shortening and let cool. Then mix shortening with sugar, eggs, and extract. Add flour and baking powder. Mix well. Make into balls or shapes. Bake at 350 degrees until bottom is lightly browned, and top is not to stiff Let cool. Then apply
glaze. |
